When we select the option to invert and sync output2, wouldn't that just cancel the waveforms?

Immediately to the right of the three Waveform Panes, you'll see two columns of selector buttons, labeled "1" and "2." If you look down to the bottom, you'll see that Follow Out 1, Spike+Sync, and Inverse+Sync are all located under column 2. This means that they only affect Out 2. So both waveforms are not inverted, just the one on Out 2. Consequently, there's no cancellation.

The boost cable and the Boost 2.0, don't perform a plain summation. They "invert" one of the waveforms before the summation, and thus, if you don't invert one of them before, then there is cancellation.
