I have twice now run optimization scans on my biofeedback results and it's a time investment of over an hour each time. Is it a worthwhile undertaking the optimization scans?

It is much better to do the scan, then optimize those 20 frequencies, than to scan a tighter range.

If you tried to get the same accuracy doing the full scan as when doing the Optimize on the 20 frequencies it would take forever to finish the scan.

What you are doing with the full scan is picking the 20 most responsive frequencies out of the whole pathogen range, then with Optimize, focusing on the very best from that tiny range to kill the cause of that responsive frequency.
