Is it possible to download Spooky2 software onto my work laptop purely for experimenting with meaning learning my way around the software and setting up frequencies/programs? How do I do test mode?

The process is the same as you performed for the version with generators.

With no generators hooked up, it will go into test mode and provide a number of phantom generators to work with.

You can load and run what you like to these virtual generators.

Therefore, the download you will want is the same software you downloaded and installed on the system you use with generators.
