You can use frequencies up to the maximum frequency of a frequency generator to modulate or switch on or off an infrared LED.
You would need a similar IR LED to Spooky2 Cold Laser Specification for 810nm wavelength. For safety reasons I wouldn't recommend this as a DIY project unless you know what you are doing and know how to test it to make sure it is safe to use.
