What is the different between running BPM and HRV when doing pulse scan?

BPM is the heart rate per minute and all are compared for the Max or Min, as set.

HRV calculates the variations between the last and current rates to get the largest variations as the frequencies to keep.

I don't know which is better - and like many variables, it may be that some individuals do better with different settings.
