If you have the scalar transmitter and receiver on either side of the bed, how far down the length of the bed do the waves go, and how high towards the ceiling do they reach?

You take the distance between the 2 boxes, and cut that in half. That is the diameter of the sphere that is at the midpoint between the two boxes. The shape isn't really a sphere, it's more like an American football shape, but this gives you an idea of how far up, down, towards the foot and head of the bed the field goes.
